popping jelly, served on a thin,
crispy wafer topped with
microgreens. The main course
features a deconstructed salad,
consisting of delicately sliced
radish, a pickled rolled
cucumber, and a smear of pea
mousse infused with herb oil. For
dessert, a refreshing raspberry
jelly is paired with light meringue
and fresh fruit.
